Anthology (EXPLORA I)

A novel taste of Italy
VERIFIED LUXURY
EXPLORA I's Anthology invites diners to explore the diverse regions of Italy, from the red prawns of Sicilian waters to the black truffles of Piedmont, with a stop along the way to the Amalfi Coast for lemons. Franck Garanger, EXPLORA's head of culinary, expertly combines these unique elements in Anthology's seven-course menu, treating each dish with the utmost reverence while leaving enough room for creative innovation. For example, gourmands will be delighted by a meticulously crafted ravioli stuffed with langoustines, swimming in San Marzano tomato consommé and sage butter, that maintains a sense of freshness and playfulness.

The interiors of Anthology reflect the spirit of the menu, featuring simple, clean lines in a space that is neither overly fussy nor formal. This creates the perfect canvas for the artistry displayed on every plate to shine. Anthology pulls off a bold feat: making beloved culinary traditions feel new.

Our Inspector's Highlights

  • Garanger’s seven-course Italian-inspired menu triumphs by elevating Italian classics such as risotto, cannelloni and spaghetti to new heights with creative touches that celebrate the simplicity of each ingredient.
  • The bright and airy indoor space seats 48 and feels intimate and sleek, while the outdoor area accommodates 22 diners, allowing them to enjoy their meal with the ocean air and sparkling Mediterranean water.
  • Dishes prominently spotlight luxurious ingredients like Oscietra Royal caviar, lobster, black truffle and Wagyu beef.
  • The meal concludes with a beautifully plated finish; the millefoglie features pillowy vanilla cream sandwiched between two caramelized crisps of dough, nearly too pretty to eat.
