The 50-room boutique hotel, designed by French architect Christophe Pillet, pairs modern minimalism with Moroccan craftsmanship through arched colonnades, hand-worked plaster and intricate geometric tilework. Guest rooms feel airy and refined, with leather accents and large windows framing sweeping views of Fez. Beyond the accommodations, the hotel provides resort-like amenities, including an infinity-edge pool overlooking the medina, a rooftop bar popular for sunset cocktails and a spa centered around a traditional Moroccan hammam.

  • Hotel Sahrai’s 50 rooms and suites feel less like a heritage stay and more like a vision of modern Morocco. Pillet’s design embraces clean lines, contemporary furnishings and open-plan layouts (including glass-walled marble bathrooms) over antiques and traditional ornamentation, while floor-to-ceiling windows flood the spaces with natural light.
  • Many of Fez’s luxury hotels are housed in historic riads with charming courtyards and plunge pools. An infinity-edge pool overlooking the city, however, is a far rarer find. One of Hotel Sahrai’s signature features, the pool allows guests to cool off while still gazing across the medina and getting an enviable photo opportunity.
  • The hotel's bars make the most of its panoramic setting above Fez. Arcades provides a relaxed backdrop for afternoon tea, casual bites and cocktails beneath graceful arches overlooking the medina. After sunset, Salon Lyautey draws a stylish crowd to its rooftop perch, where Moroccan wines, craft cocktails and a fireplace create an inviting atmosphere framed by sweeping city views.

The warm dining room, adorned with wooden beams and intricately carved details, feels rich with regional character, particularly when the sounds of live lute music drift through the space during dinner service.
  • Mornings begin at Amaraz with a buffet that blends Moroccan specialties with European breakfast staples. Expect pastries, fruit and crêpes alongside regional favorites before a day exploring the medina.
  • The Fez hotel’s Medusa Restaurant looks across the Mediterranean for inspiration. Wood-fired pizzas, housemade pastas and risottos make up the menu, while the contemporary dining room channels the easy sophistication of a modern Italian ristorante.
  • With its leafy décor, indoor-outdoor seating and sweeping city views, Jungle Restaurant strikes a balance between laidback terrace and stylish cocktail lounge. A menu of Lebanese mezze, wines and expertly mixed cocktails keep guests lingering long after sunset.
