Our Inspector's Highlights
- Dishes feature fresh produce and seafood from Aruba and the chef’s own organic farm in Miami. At Ford’s Farm, he grows everything from eggplant and turnips to Swiss chard and zucchini blossoms on the 5.5-acre plot.
- While the menu changes with the season, one mainstay is the roasted truffle chicken. Tender and luscious, the chicken is one of Ford’s signature dishes, and it comes on a bed of silky pomme puree with fried chicken skin chips. Be sure to order it.
- Eagle Beach just outside inspires Terra’s warm and intimate 13-table dining room. Steeped in sandy tones and handcrafted wood, the interior design from Aruba’s Coastal Crafters traces the beach’s organic curves in the ceiling ripples.
- Among the starters, enjoy the flower-petal-topped aguachile Hamachi crudo; the platter of bone marrow, wagyu beef tartare covered in shaved cheese, and sourdough to scoop it all up; and the pull-apart brioche, which arrives warm with sweet miso-honey butter. But save room for dessert, like the tres leches with hibiscus gel, guava sorbet and shards of meringue.
- Seasonal ingredients give cocktails a taste of the island, like the bitter and tropical Banana Boat, featuring Plymouth Gin, Suze, Lillet Blanc and banana liqueur that’s crowned with a banana all-spice foam.
