Available Friday through Sunday by reservation only, the exclusive experience unfolds in an elegant space adorned with artisan pottery, rich textures and sweeping views of Sosúa Bay through floor-to-ceiling windows or from the open-air terrace. 

The multi-course tasting menu is a thoughtful tribute to native ingredients — think coconut, cassava and tropical tubers — expertly reimagined in artful dishes featuring tender seafood, crispy chicharrón or deeply flavored risottos. Each plate is presented with precision, while attentive service ensures wine pairings and cocktails complement the experience from start to finish.

The Chef

  • Chef Tita grew up in Santo Domingo with a deep appreciation for Dominican home cooking, inspired by her grandmother’s traditional recipes. This early exposure ignited her passion for preserving and celebrating the country’s culinary heritage.
  • Páez studied culinary arts in Paris and Buenos Aires, blending classical techniques with a commitment to local flavors. Her international education helped shape a signature style that’s refined yet rooted in Dominican tradition.
  • Also known as “La Chef de la Nueva Cocina Dominicana” (The Chef of the New Dominican Cuisine), Páez has spent years reimagining ancestral dishes for modern palates. She’s also a vocal advocate for food as a vehicle for national identity and empowerment.
  • Chef Tita became a household name through popular TV cooking shows (MasterChef Republica Dominica, Top Chef VIP) and her activism around food security and education. She even championed the country’s first gastronomic legislation, officially recognizing Dominican cuisine as a National Intangible Cultural Heritage.
  • Prior to Aguají, Páez launched Morisoñando, a restaurant that showcased Dominican flavors elevated with modern technique, earning critical acclaim both locally and internationally. With The Ocean Club’s Aguají, chef Tita brings her culinary journey full circle, fusing heritage, innovation and artistry.
