Given the circular theme at The Ritz-Carlton Maldives, Fari Islands, with its round villas, pool and overall layout, it’s fitting that Summer Pavilion sits behind a white moon gate. Step through the entrance, past the koi pond, through the leafy garden into an elegant open-air dining room that overlooks the surrounding turquoise waters and the aforementioned villas. 

Then sit down to modern Cantonese cuisine from executive chef David Kang and his team. You can choose among shareable plates, from a dim sum platter to a luscious Peking duck, or order a meal just for you, like the wok-fried scallop with XO sauce or crispy braised pork belly. Whatever you choose, be sure to pair your dinner with one of the Chinese teas and wines on offer. 

The restaurant is an offshoot of The Ritz-Carlton, Millenia Singapore’s well-regarded Summer Pavilion, run by Hong Kong native chef Cheung Siu Kong. Yet, the Maldives location carves its own identity through its distinct setting and tailored menu.

Our Inspector's Highlights

  • If you want to share a meal with others, go for the Cantonese-style stir-fried local lobster or Peking duck. Both are signatures of the Maldives restaurant.
  • Peruse the selection of sustainable Chinese teas, which include everything from lapsang souchong, a smoky, rich black blend, to longjin, a green variety with nutty notes.
  • Enjoy a nice sampling of the dim sum offerings with the platter, which includes black truffle lobster har gow, squid ink Chilean seabass dumplings, Alaskan king crab dumplings and XO money bag dumplings (a Chinese New Year favorite, the tied edible bags filled with seafood symbolize good fortune). However, you may want to add on orders of the chicken xiao long bao (soup dumplings) and the wagyu dumplings.
  • Hovering over the Indian Ocean, the Maldives restaurant provides a scenic and romantic setting. Above the tables, the ceiling fixture resembles a large lantern, lighting up the clean-lined dining room.
  • Summer Pavilion serves delicious Cantonese delicacies, like braised bird’s nest, fish maw with truffle sauce and abalone.

  • A sophisticated and spacious private dining room offers a more exclusive experience for up to 10. Sit down at the round black stone table to enjoy a chef's tasting menu.
