Seta Su Ilma  is the culinary centerpiece of The Ritz-Carlton Yacht Collection’s Ilma, offering a polished take on contemporary Italian fine dining at sea. Designed in collaboration with heralded chef Fabio Trabocchi, the multi-course menu draws inspiration from the acclaimed toque’s native Le Marche, on the Adriatic coast, and other Italian regional classics, albeit with an updated twist. The menu is seafood-forward with housemade pastas and elegant sauces playing a strong supporting role. 

The intimate dining room feels refined but unfussy, with warm wood tones and an open, inviting layout. It’s the ship’s most formal dining experience, yet it retains a sense of ease that suits Ilma’s yacht-style rhythm.

  • Thanks to staggered seating times, the 40-seat Seta Su Ilma rarely feels crowded. Instead, the space offers an exclusive enclave in which to savor chef Trabocchi’s creations.
  • The wine pairings are a must. Each dish finds its complement in a world-class pour (the collection heavily draws from Italy), expertly introduced by Seta’s knowledgeable sommeliers.
  • No expense was spared on the cuisine at this fine-dining eatery. On a recent menu, the bread service came with Armando Manni Tuscan extra-virgin olive oil (often cited as the world’s best), and the final savory course featured a wagyu ribeye drizzled with 50-year-aged balsamic vinegar.
  • Seafood features prominently on the multi-course tasting menu, ranging from caviar service and a Mediterranean hamachi tartlet to lobster ravioli in a fragrant ginger emulsion.
  • In keeping with the superyacht aesthetic, the restaurant eschews white tablecloths and chandeliers in favor of sleek dark wood tables and timeless stemware with plush pillows for extra cushion.

Things to Know

  • Seta is the only restaurant aboard The Ritz-Carlton’s Ilma that is not included in your sailing. The multi-course tasting menu will incur a charge, as will the wine pairings. 
  • The “yacht sophisticated” dress code at Seta Su means shorts, ball caps, T-shirts and flip-flops are prohibited. The general vibe calls for collared shirts for men and women should expect to don dresses, skirts, elegant jumpsuits or tailored trousers.
  • Reservations are required at Seta Su Ilma. With limited seating in the dining room, you’ll want to book this one as soon as possible.
