The design and overall appeal of Teodoro are a bespoke marvel, featuring artisanal seating and tables that seamlessly blend with the surroundings. The open kitchen complements the building's shape harmoniously.
The seasonal, nightly changing menu highlights regional and national Mexican ingredients. The restaurant’s motto is: “The wise table. The homage that renews,” offering a fresh take on Mexican cuisine.
Endless views of the Caribbean Sea and jungle create a blissful environment at Teodoro, enhanced by atmospheric music and the gentle sounds of a professional kitchen in action.
In homage to the burgeoning Mexican wine scene, pairings are available with the tasting menu. National spirit-based cocktails and fresh juices are also on offer.
Teodoro celebrates Mexican tradition in its dishes and through culinary takeovers and special offerings like chile en nogada (roasted and stuffed poblano peppers doused in walnut-cream sauce) on select dates.

The Food

Chef Alexis Valera’s passion for local ingredients is evident in his dishes, which feature items such as escamoles(also known as Mexican caviar, it’s edible larvae and pupae of ants), mezcal, jackfruit, local lime varieties and local pumpkin.
Traditional Mexican cuisine is reflected in the reinterpretation of mole and tamales.
The first course is a fragrant creation featuring regional citrus and flowers, habanero gel and caviar, served with a salad of distinct garnishes — an ideal introduction to open the taste buds.
Several dishes on the menu feature various types of mushrooms, reflecting their seasonal flavor and balancing the robust Mexican spices and ingredients. These mushrooms, which flourish in Mexico during the rainy summer season, complement the dishes beautifully.
The pre-dessert and desserts deviate from traditional Mexican options, instead showcasing local fruits like jackfruit, prickly pear and pitaya, alongside chile, grasshopper sugar, cacao nibs and passion fruit. It’s a delightful way to conclude the meal, with perhaps a sip of mezcal that profoundly enhances the flavors.
