An exciting addition to Dubai’s impressive fine-dining scene, FZN By Björn Frantzén is the latest concept from the renowned namesake Swedish chef. A sibling to his widely celebrated restaurants Frantzén in Stockholm and Zén in Singapore, this intimate two-story restaurant is his second opening in the city after social dining restaurant and bar Studio Frantzén (Forbes Travel Guide Four-Star Atlantis, The Palm is home to both Dubai spots).

Expect an inventive nine-course tasting menu that brings together the elegance of modern European cuisine with Japanese influences, all prepared with the techniques, creativity and artistry for which Frantzén is known. The kitchen is led by executive chef Torsten Vildgaard, an expert in Nordic cuisine with a French twist. His experience spans over a decade at the legendary Noma in Copenhagen and leading his restaurant Studio Copenhagen to much acclaim in a short period after its opening.

The contemporary space that seats 27 diners each night is designed with a cozy and stylish Scandinavian-chic aesthetic, creating a sophisticated yet inviting atmosphere in one of Dubai’s most luxurious locations. The exceptional food, attentive service and a playlist of 300 tracks personally curated by Frantzén create a dining experience where both the ambiance and flavors feel new and exciting.

  • Step through the door at FZN By Björn Frantzén and find yourself in what feels like a private dinner gathering in the effortlessly stylish home of that well-traveled friend who has exceptional taste. The restaurant’s nine-course tasting menu features modern European dishes, informed by Japanese kaiseki sensibilities and a spritz of French technique, each plated with meticulous, artful presentations.
  • The experience begins in the living room — a beautiful space filled with vibrant colors, prints, art and textures — where you’ll enjoy a selection of canapés, including the choux de Bourgogne, French pastry filled with Mornay sauce and finished with savory craquelin and roasted spring onion, and the Råraka canapé, FZN’s version of the classic Swedish potato cake topped with whipped crème fraîche, pickled red onions and Swedish delicacy Kalix löjrom, or vendace roe.
  • Following a brief guided tour of the house and open terrace, head downstairs to the dining room where four tables seat up to 14 guests. For an immersive experience, sit at the counter with 13 front-row seats to the open kitchen where chefs plate dishes with skilled precision.
  • Thoughtfully conceptualized using creativity, detailed techniques and top-notch ingredients from around the world, each dish is just as pleasing to the eye as it is to the palate. The rose-shaped otoro with fermented strawberries, turnips and wasabi features Japanese bluefin tuna with Italian colatura fish sauce made from fermented anchovies. Chawanmushi, a savory Japanese egg custard, comes with smoked beef broth and caviar. King crab is roasted in a pan, then lightly grilled over birch wood embers. It’s served with saffron beurre blanc and sea buckthorn and crowned with a kinome leaf. The grilled duck, marinated with shio koji, accompanies foie gras, Kampot pepper jus and wasabi.
  • A worthwhile finale to the meal, dessert at FZN By Björn Frantzén is just as exquisite as the rest of the courses. The apple tatin comes with crème cru ice cream, Earl Grey mousse and oolong oil.

  • After dinner, make your way to the 18-seat terrace for drinks and petit fours, alongside breathtaking views of Palm Jumeirah and the Dubai skyline.
  • Wine and non-alcoholic pairings, and a combination of both, are available with the tasting menu. The wine cellar houses more than 1,300 wines from nearly 15 countries, from boutique producers to prestigious labels.

  • The dress code at FZN By Björn Frantzén is elegant casual. Shorts and flip-flops are not permitted.
