Drawing inspiration from his open-flame kitchen in Stockholm, the restaurant showcases signature and newly imagined dishes prepared “from the fireplace” using the finest ingredients from around the world — including Norway, Japan and France. But the establishment also adds in some playfulness, from the large bear face sculpture at the entrance (Björn means “bear,” and it’s a recurring theme) to a delightful post-meal Candy Room. Studio Frantzén delivers a relaxed à la carte dining experience in a lively setting, promising a great night out in Dubai.

  • The contemporary open-plan design of the Dubai restaurant feels eclectic, laidback and stylish, all at once. Cozy Scandinavian-inspired dining booths sit under quirky upside-down chandeliers, hand-painted murals and a sculptural ceiling in the large atrium. Five chef’s tables offer up-close views of the chefs at work in the open kitchen, while the bar is a trendy spot to sip on cocktails before or after dinner. A resident DJ ensures the vibe remains upbeat late into the evening.
  • Begin your meal with the Swedish oyster with kohlrabi broth, wasabi and salmon roe. Then move onto the delightful selection of Scandinavian sushi, such as eel gunkan with foie gras, apple and hibiscus, and scallop maki with pickled jalapeño, myoga (Japanese ginger) and cucumber.
  • Recommended “mains from the fireplace” include côte de boeuf and smoked bone marrow; rock lobster with coriander, curry and brown-butter hollandaise; and the chef’s signature turbot with butter sauce, anchovies, caviar and dill.
  • Decorated with the brand’s trademark bear print, the Candy Room, a walk-in dessert room, offers an interactive element to a meal at Studio Frantzén. Simply engage with the pastry chefs to choose from a variety of indulgent creations, such as strawberry and shiso macarons, blueberry pâte de fruit, and miso and chocolate fudge, and customize a dessert to be brought to your table. Also on the sweets menu are chamomile and ghaf honey cheesecake, citrus and lemon thyme pavlova with cloudberry marmalade, and soft-serve ice cream.
  • The bar menu features an impressive selection of creative Nordic-inspired cocktails, like the fruity Rhubarb, with The Botanist gin, bay leaf, rhubarb and dessert wine, and the bubbly and sweet Lingon, with Hayman’s sloe gin, lingonberries, citrus, cassis and champagne.

  • While the menu does feature some vegetarian options, this is a restaurant that carnivores will enjoy most, since the majority of the menu is seafood and meat dishes.
  • The dress code at Studio Frantzén is smart casual. Flip-flops, open-toed shoes, swimwear and athletic attire are not allowed.
